  • 8 oz spaghetti spaghettini, or linguine
  • 1/4 cup olive oil extra-virgin
  • 10 cloves garlic sliced
  • 1/2 tsp red chili flakes or 1 dried red chili, crushed
  • 1 tbsp fresh parsley chopped, or 1 tsp dried parsley
  • 1/4 cup parmesan cheese grated, optional
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

Instructions

  • Bring a large pot of water to a boil. Add a generous amount of salt (see notes below) and add pasta. Cook until it is one minute shy of al-dente, and reserve about a cup of pasta water before draining the pasta.
