CHICKEN AND CORN PATTIES

Breakfast Ideas For Kids (15)

For ages 2.5 years old and above

Ingredients:

  • 200g chicken breast – minced
  • 1/3 large fresh corn-on-the-cob (refer to note 1)
  • 3 pieces of water chestnuts – finely diced
  • 10 strings of fine French beans – finely diced
  • 1 small red onion (about 60g) – minced
  • ½ cup normal breadcrumb/ panko crumb (Japanese breadcrumb)
  • 2 ½ tbsp cornflour
  • 1 large egg (lightly beaten)
  • 2 tsp cooking oil (I used olive oil)

Seasoning:

  • 1 tsp salt
  • ¾ tsp sugar
  • ¼ tsp paprika (optional)
  • Dash of pepper

Method:

  1. Put chicken breast, sweet corns, water chestnuts, fine French beans and red onion into a mixing bowl and combine well. Add in breadcrumb and cornflour to the mixture.
  2. Add in egg, seasoning and oil. Stir in one direction until the batter is well distributed.
  3. Heat a little oil in a non-stick pan. Drop1 tablespoonful of batter into the pan and flatten slightly with a spatula/ fork. Lower heat and cook for 2-3 minutes on each side or until golden brown. Cook the patties in batches. (refer to note 2)
  4. Transfer patties to a serving plate lined with kitchen paper. Best to serve warm with dipping sauce.

Time needed: 10 minutes
For kids aged 3-12

Ingredients:

  • 4-5 Cherry tomatoes
  • 2 Low-fat, hi-cal cheese cubes
  • Tuna flakes, oil drained
  • Wheat flour wrap
  • Panda butter cookie
  • Mozarella cheese spread

Method:

  1. Drain oil from tuna flakes.
  2. Add a dash of pepper to taste.
  3. Spread wrap with some mozzarella cheese and add in tuna flakes.

WRAP THOSE EGGS
From Wholesome Toddler Food

For kids between 1-4 years old

Ingredients:

  • 1 flour tortilla
  • shredded cheese
  • 1 egg
  • chopped cooked veggies (optional)

Method:

  1. Warm the tortilla and scramble the egg in a frying pan.
  2. On the tortilla, spread out the scrambled egg and veggies (if using veggies)
  3. Cover with shredded cheese. Wrap or roll up the tortilla and serve when cheese has melted.
  4. You can cut the wrap in “pinwheels” too.

APPLE BREAKFAST BARS
From Wholeseome Toddler Food

For kids between 1-4 years old

Ingredients:

  • 1 1/2 cups quick rolled oats
  • 1/4 cup whole wheat flour
  • 2/3 cup dates, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 teaspoon sea salt
  • 1/4 cup orange juice
  • 1 1/2 cups raw apples, shredded

Method:

  1. Combine all ingredients.
  2. Let stand 10 minutes. Press mixture into 8″ x 8″ baking dish.
  3. Bake until lightly browned, about 25 minutes.
  4. Loosen with spatula, and cut into bars while warm.
  5. Serve hot for breakfast or snack **Freezes Well**

PICK N MIX FRITTERS
From Stay At Home Mum

Breakfast Ideas For Kids (16)Ingredients:

  • 1 x 125g can of creamed corn
  • 1 1/4 cups plain flour
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon baking powder
  • Olive oil to fry

Pick-n-mix (Use as many of these fillings as you want)

Ingredients:

  • Chopped ham
  • Lightly fried bacon pieces
  • Zucchini
  • Corn
  • Grated cheese
  • Shallots
  • Grated carrot
  • Lightly fried onion
  • Fresh herbs – chives, parsley, thyme

Method:

  1. Whisk milk and eggs together.
  2. Add other ingredients and mix until you have a smooth batter.
  3. Add mix-n-match filling – or another 125g creamed corn.
  4. Heat frying pan (medium) with oil, dollop tablespoons full of batter into the pan and cook each side until golden.
  5. These are mine, two variations, one bacon/onion/cheese and one corn/cheese

CHICKEN NOODLE OMELETTE

Ingredients:

  • 1 pack instant chicken noodles
  • 1 cup cooked barbecue chicken
  • 2 teaspoons fine chopped parsley
  • 2 eggs lightly beaten
  • 1/2 cup grated cheese

Method:

  1. Cook noodles as normal (including flavour) and drain well. Combine noodles, chicken, parsley, cheese and eggs, mix well.
  2. Cook for 5 minutess in non stick frying pan, don’t stir.
  3. Sprinkle with cheese & cook under oven grill for 2mins. Serve.
