A few months ago I went to Denver to be with a friend who was going through a rough time. She decided to make her daughter’s favorite breakfast for me: Corned Beef Hash Breakfast Toast. Now, my boys are picky eaters. I was surprised that her daughter would eat this!

Her daughter is almost exactly the same age as Tyler. In fact, we only know each other because of the kids. She is one of my “June Mommas” from our Facebook group for kids born that month. We met in person once before when we took a family trip to Denver, so when she needed help (and Spirit Airlines had super cheap flights) I took off for a few days.

She asked if I liked corned beef hash and I said I had never tried it before. My dad used to make it often, especially on the weekends. But I never ate it. I did always like the smell, though! I’m not sure how often he makes it anymore, but next time I will be having some with him.

While they had theirs witheggs cooked over-easy, I couldn’t do it. There’s something about a runny yolk that absolutely grosses me out. So I made my own scrambled eggs to put on my toast. I made it for my boys that way, too. I know they prefer their eggs scrambled like I do.

At first, the boys weren’t so sure about our “Big Breakfast Sunday” that week. Tyler still didn’t eat much of it. Once we helped Ryan get it cut up, he seemed to enjoy the meal. Of course, he is more of a meat-eater than Tyler has ever been, and Ryan lovesscrambled eggs.

I cut mine up to eat it, Justin picked it up to eat like you would a regular piece of toast. You could also top it with another piece of toast to make a beef hash breakfast sandwich. This recipe is great because it can be so flexible. You can cook your eggs in whatever way you choose.

This beef hash recipe would be a great way to celebrate St. Patrick’s Day.

A Note About the Ingredients

To keep this an easy recipe, I used a can of corned beef hash. You could also make homemade corned beef hash with leftover meat and diced pan-fried potatoes.

We used regular wheat bread for our original recipe, but you can use any type of bread. I’ve also made this on sourdough bread and rye bread. I like the thick slices of sourdough, so that was my favorite so far. This would also be good on English muffins or a bagel.

Corned Beef Hash Breakfast Toast Step by Step

Ingredients

  • 14ozcorned beef hash
  • 4slicesbread
  • 1tbspbutter
  • 4eggs
  • salt and black pepper(to taste)

Preparation

In a large cast iron skillet, over medium-high heat, cook the corned beef hash according to the directions. In other words, brown it similarly to how you would regular ground beef.

Meanwhile,toast your breadto a medium setting, until golden brown, and lightly butter the bread. Place one slice of bread on each serving plate.

When the corned beef hash is finished cooking, add the eggs. If you want a fried egg, place it in the middle of the crispy hash and cook. For scrambled eggs, crack the eggs and immediately stir into the corn beef hash.

Top the toast with the corned beef hash and eggs and sprinkle with a bit of salt and pepper, to taste. Serve immediately as this is best warm!

Corned Beef Hash Breakfast Toast Leftovers

Storage: It’s best to store leftover corned beef hash separately from the bread or toast. Ideally, store the corned beef hash in an airtight container in the refrigerator for 2-3 days and don’t toast the bread until you are ready to serve the leftovers.

Reheating: Reheat the corned beef hash the same way you cooked it, in a skillet over medium heat until warmed through.

  • In a large skillet, prepare the corned beef hash according to the directions

  • Meanwhile, toast and lightly butter the bread then place each piece on a serving plate

  • When the hash is almost done add the eggs to the pan

  • Prepare your eggs as preferred (fried, scrambled, etc.)

  • Add the corned beef hash and eggs to the top of each piece of toast

  • Sprinkle with salt and pepper, to taste, and serve immediately
