No need to go out and buy fancy flavored syrups when you can make your own at home at a fraction of the cost!

This delicious cinnamon simple syrup recipe is a favorite in our home, especially during the colder months. Used in a variety of ways including my morning coffee, it’s the perfect way to add some sweetness and warm spice to my drinks. I especially love using it to make my own Cinnamon Dolce Latte Starbucks dupe at home.

This syrup is incredibly easy to make too and takes just minutes. Before you know it, you can be adding this flavorful syrup to your morning coffee, tea, hot chocolate or even your favorite co*cktails.

What is simple syrup?

A simple syrup is a syrup made by heating sugar and water together until the sugar dissolves, leaving a sweet syrup behind. This syrup is often made using equal parts of sugar and water, although different ratios of these ingredients can also be used.

Homemade simple syrup can be stores in an airtight container in the fridge for weeks. They are often used to sweeten drinks like co*cktails or coffee drinks or poured over cakes (like my Ravani recipe).

While a basic simple syrup is just 2 ingredients (sugar and water), simple syrups can have other ingredients added to them too to add flavor. Note: adding these extra ingredients will often shorten the shelf life of the syrup. In this recipe, cinnamon is used to add flavor. I used peppermint extract in my Peppermint Syrup Recipe.

Other spices, herbs, and even fruit can also be used to flavor simple syrups too. For example, I used herbs like thyme and rosemary in the simple syrups used in my Pomegranate Rosemary Gin Fizz co*cktail and .

  • This syrup is made with the warm spice, cinnamon, and is perfect for adding to recipes during the colder months (though it can be used year round).

Ingredients for cinnamon simple syrup

  • Sugar: Granulated sugar is dissolved into water to make the simple syrup but brown sugar or coconut sugar can be substituted. Use granulated sugar for a clearer syrup color if you plan to use this in a co*cktail, for example, and wish to keep it lighter in color. I personally like to use 1/2 brown sugar and 1/2 white sugar. Dark brown sugar adds a hint of molasses flavor to this delicious recipe.
  • Vanilla extract: Adds another layer of flavor to this delicious syrup.
  • Cinnamon sticks: I use 3 whole cinnamon sticks in this delicious cinnamon syrup recipe to achieve a stronger flavor. While whole cinnamon is preferable, if you only have ground cinnamon on hand, you can replace the cinnamon sticks with 1 teaspoon of ground cinnamon.

How to make this easy cinnamon simple syrup recipe

  1. Dissolve the sugar. In a small saucepan over medium heat, add all of the syrup ingredients except the vanilla extract. Simmer together for 5-7 minutes, whisking often.
  2. Add vanilla. Remove from heat and whisk in the vanilla. Let it cool.
  3. Store. Once cooled, remove the cinnamon sticks and transfer to a mason jar or other container. Store in the fridge.

How long will this syrup last?

If stores correctly as described in the recipe, this syrup will last weeks (about 2-4 weeks in the fridge).

Where to use cinnamon simple syrup

This homemade syrup is great in:

  • Coffee. You can make a homemade Cinnamon Dolce Latte from the comfort of your own home. If latte isn’t your thing, just use the homemade coffee syrup in your morning mug of coffee in place of sugar. While the warm cinnamon spice is great during the cooler months, it’s equally delicious in warmer weather when added to iced coffee or cold brew.
  • co*cktails. You can use this to make any number of co*cktails that call for simple syrup. For example, it can be used to make my Spiced Pear Gin Fizz.
  • Other warm drink recipes. Hot chocolate, tea, or a hot toddy can all benefit from a bit of this syrup.
  • Drizzled on warm baked goods. For example, this can be used to soak sponge cakes like in my Ravani (Greek Semolina Cake). I like to add a bit more water to it when I use it to soak cakes so as not to over sweeten the cake.

Ingredients

  • 1/2 cup sugar (I like to do 1/4 cup each brown sugar and white granulated sugar. If you prefer, you can use just white granulated sugar)
  • 2 sticks cinnamon
  • 1/2 teaspoon vanilla extract
