These kids banana pancakes are healthy, nutritious and frankly pretty delicious. They’re so easy to make and perfect from little toddlers right up to well, us adults :)

I have teens and so wake up time isn’t all giggles and games. But (and this is huge) they do hop out of bed for this breakfast. I think it’s because they are worried their siblings will eat their share.

Plus these yummy pancakes are easy to make and only take THREE ingredients.

I know that most days it’s hard to get the kids to school with any kind of breakfast in their tummies. And the idea of heating up the stove when you have 2 minutes till the bus leaves….well those days happen. That’s why I keep these muffins in the freezer. They thaw on the way to the bus.

As an addition you can add a teaspoon of cinnamon to these pancakes. Bananas and cinnamon are one of the best food pairs known to man as far as my kids are concerned, so feel free to add a little in if your kids love it too. You could also add a tsp of a good quality vanilla bean paste too if that’s your thing.

Flipping Pancakes

Once you have your skillet or griddle hot and added a little oil or butter if your pan is not non stick, it’s time to cook your pancakes. And yes, this involves having to flip them too.

You want to have the pan on a medium heat. Not too hot so they burn whilst they’re cooking, but enough to give them a good color. All out ovens seem to be slightly different so use your judgement on this.

One thing to note, you need a spatula. I use a rubber one so it doesn’t scratch my pan. Ok, first batch. Put a heaped table spoon of banana mixture batter into the frying pan and it’ll spread out.

Let it cook until the underside is a good color and there are bubbles appearing on the top. Then use your spatula to flip the pancake and repeat on the other side.

If you flip the pancake too soon, you can repeat until it’s cooked enough. Put the pancake on a plate and repeat until you have a batch, or serve these up as they’re ready.

You can always blast these for a minute or so in the microwave to reheat if they cool down while you’re finishing off the batch.

Two Ingredient Banana Pancakes

There have been quite a few popular recipes showing a two ingredient banana pancake recipe and touting it as the next best thing.

If, however, you were like me and gave it a go – then you will know that it is an utter pile of nonsense. You end up with slimy, sloppy pancakes that … as my kids would say… suck! It’s the flour that makes them magical. Not a lot. Just a couple tablespoons makes all the difference.

And if you’re going to be making pancakes – you want to enjoy them!

What Flour Should You Use?

Honestly it doesn’t matter. Just try and choose an unbleached organic flour to avoid any nasties. I have made these with coconut flour, whole wheat flour, oat and almond flour. The only thing is that if you are not using the ‘self rising’ variety, then you will also need to add a little baking powder to the mix to get your pancakes to rise.


For about a year now, I have been using Einkorn Flour. It’s made from an ancient wheat grain variety that hasn’t been tampered with or genetically modified. It doesn’t result in tummy aches and doesn’t give you that sick kind of feeling that our family tends to get after eating more refined grains.

How to Make your Own Self Raising Flour

If you have a recipe needing self rising flour and you do not have any in the pantry, then it’s easy to makeit up yourself. You will need:

  • Ripe Bananas. The more ripe (or overripe) your bananas, the sweeter your pancakes will be.
  • Serving Size: This recipe makes 10 large pancakes which is just perfect for two adults or 4 kids. So double up as needed.
  • Optional Rest time: I like to let my pancake mixture ‘rest for around 5 minutes before cooking the pancakes. It gives the baking powder time to work it’s magic and avoids that first pancake failure.
  • Quick Breakfast Idea: Because these are so darn quick to make, you can even whip these up on a school day. They are just as yummy on their own, no need for maple syrup and yogurt if you are in a rush. With bananas and eggs making up 90% of the pancake, you know your kids are getting a good start to the Day.

How To Make Kids Banana Pancakes

Ingredients

  • 2BananasThe riper the better. Medium sized. Mashed with a fork.
  • 2EggsFreerange
  • ¾cupSelf Rising FlourOrganic (or make your own see notes in post on how to make your own)

Instructions

  • Preheat pan on Stove. Add a little butter to stop sticking
  • Whisk all ingredients together in a medium bowl
  • Spoon about 2 Tablespoons of mixture into the pan per pancake
  • Cook each side, flipping half way, until golden
  • Serve with maple syrup, extra fruit and Greek Yogurt
