When I originally tried the 2 ingredient pancakes I wasn’t super excited. I think my expectations were set too high because the recipe said “pancakes.”

I decided to add some PB2 and vanilla to the recipe and I liked the pancakes much more! Plus the extra protein from the PB2 helped keep me full longer.

The good thing about these pancakes is they are very low in points. I made four pancakes and it was only 1 Freestyle point!PB2 Pancakes – 1 Freestyle Point - Keeping On Point (1)

This is also an easy recipe to make. Those are my favorite! I actually made them one morning before work.

I’m not usually that ambitious before work, but I was out of the ingredients for my breakfast sandwich.

Personally, I think using a more ripe banana makes this taste better. It’s also easier to mash up the banana.

The PB2 powdered peanut butter has become one of my favorite ingredients to experiment with.

I can’t even tell a difference when I use it in recipes. Plus it’s great because it cuts out a lot of the fat.

These PB2 pancakes are similar to regular pancakes when you cook them. They will start to show little bubbles when it is time to flip.

I used a couple tablespoons of sugar free syrup which didn’t add any points. These PB2 pancakes are also great with a bowl of fresh fruit. Check out the recipe below!

PB2 Pancakes – Weight Watchers Freestyle

Ingredients

  • 1ripe banana
  • 1egg
  • 2tablespoonsPB2 Powdered Peanut Butter
  • 1 tablespoonwater
  • 1/2teaspoonvanilla

Instructions

  1. Peel the banana and put it in a small mixing bowl. Mash it up.

  2. Add the egg and stir until it is completely mixed.

  3. In a small bowl, add the PB2 and water. Stir until it is smooth.

  4. Add the PB2 and vanilla to the banana mixture and stir together.

  5. Put a small frying pan over medium heat. Spray it with no-stick cooking spray. Add 1/4 cup of the batter. Flip the pancake once small bubbles start to form.

  6. Add your favorite toppings but be sure to calculate any extra points. I used sugar free syrup.

    I like the banana but I made them this week with pumpkin instead. I added a packet of equal and some cinnamon. I like them much better this way.

        I did not use any pumpkin in this recipe.

      I’m not a huge fan of the banana pancakes, that’s why I added PB2 and vanilla. I think it helps hide the taste of the banana

    Curious as to why you mixed the PB2 instead of just putting the powder straight in. Would that mess up the texture? It seems like it would help it have a “floury” base .

    When I figured the point value on my WW app it figured 2 points for the 2 Tablespoons of PB powder. Confused

      Make sure you type in “PB2 powdered peanut butter” it is only 1 point for two tablespoons.

    Kind of confused why this would be listed under a keto recipe. Bananas are 30 carbs, which uses all my carbs for one meal.

      I definitely don’t have this listed as a low carb recipe. I only post recipes that are weight watchers friendly. I’m not sure if it was on a list or something published by someone else?

    I omitted the water and added a tablespoon of cocoa powder and a tablespoon of coconut flour. Gave a better texture. With these subs, it’s a good recipe.
