I really really loved the Berry Pomegranate Chia Clif bars before they were so sadly discontinued… They were the only flavor I really liked! So I found a way to make them myself at home. These Chewy Homemade Granola Bars are both cheaper AND tastier than buying a box of Clif bars at the store, and they are fully customizable. Not to mention they only take about 10 minutes to throw together, no baking required.

As a busy college student, I spent the last 5 years on the go, often working 2 jobs while going to school full time. I didn’t have time for breakfast! And if I did manage to squeeze in a bowl of cereal or a bagel before my first class I was still hungry an hour later… Then I discovered Clif bars, and while they were expensive to me as a poor college student they were so delicious and filled me up so I justified it.

All of a sudden they stopped stocking my favorite flavor at the grocery store. I’m pretty sure I bought the very last box in town. After a few months of checking the shelf they were supposed to be on, I googled “What happened to the Berry Pomegranate Chia Clif Bars??” I found out they had been discontinued.

Heartbroken, I found myself diving around Pinterest for a solution. Nobody had a recipe for these specific Clif bars… So I had to get creative.

Finding a way to make them at home was a LIFESAVER. I was finally able to enjoy my grab-and-go breakfasts again, and I’m NEVER going back to store-bought granola bars.

So Let’s get started!

  • 1 1/4 cup Rice Crisp cereal
  • 1 cup quick oats
  • 2 tbsp ground flaxseed
  • 3 tbsp chia seeds (optional)
  • 1/4 cup nuts
  • 1/4-1/2 cup dried fruit
  • 2/3 cup nut or seed butter
  • 1/3 cup honey
  • 1 tsp vanilla

For this recipe I am using walnuts, 1/2 cherries 1/2 blueberries, and sun butter, but I also love to make it with almond butter- it’s just a little more expensive. Feel free to swap out some of the dried fruit for chocolate chips if you’d like! I’ll Include some different variations of these granola bars for you to try in a future post.

FOR BERRY POMEGRANATE CHIA:

  • dried strawberries, cranberries, and pomegranate seeds
  • chia seeds
  • no nuts (use a little less nut butter if you take an ingredient out)
  • almond butter

I start by mixing all of the dry ingredients together in the same bowl. Make sure you have a decent-sized bowl to fit everything because it will get a little sticky later and you don’t want to spill all over your countertops! But it’s ok if you do 😉

Next, I mix my nut butter, honey, and vanilla in a saucepan. You can use any nut butter, or even Nutella or cookie butter! Give it a try, trust me.

Once it is all melted together, remove it from heat and pour it all into the bowl with your dry ingredients. This is just like making no-bake cookies!

Mix it all together until there are no dry ingredients hanging out at the bottom. Everything should be fully incorporated into your mixture. It will be nice and sticky!

While still warm, pour the mixture into a 9×13 pan.

Get out a sheet of wax paper and press down with your hands so it is evenly spread out. You want to press firmly so all the ingredients will stick together when you cut them into bars.

Now that your bars are nice and flat and packed together, you can cut them into 12 equally sized bars. I always use my Mini Spatula from Pampered Chef to do this, but you can use a sharp knife just as well. I really like the sharp edge on this spatula and I use it when making sugar cookies as well when they stick to the counter (because I guess I never flour my surface well enough)!

Now, this last step is key!! If you don’t wait long enough for these bars to completely cool before you remove them from the pan, they will fall apart and crumble in your hands. If you want them to stick together like real bars you’ll need to wait at least a couple of hours or even overnight.

But then you’ll have these delicious granola bars, ready for grab-and-go breakfasts and a great source of fiber!

Ingredients

Instructions

  1. Mix all of the dry ingredients together in a large bowl.
  2. In a small saucepan, melt together your choice of nut butter as well as honey and vanilla.
  3. Pour the wet ingredients over the dry ingredients in a large bowl and mix until thoroughly coated.
  4. Dump the mixture out into a 9×13 pan and press evenly with a sheet of wax paper.
  5. Cut into 12 equal-sized bars.
  6. Let cool completely for a couple of hours before removing them from the pan.
