I have been spending a lot of time in the car on road trips lately. When I’mon a long drive, I usuallywant to be able to get grab and go food. As it turns out, grab and go and gluten intolerance don’t really go together. Car-friendly food is usually a sandwich, bagel, muffin, or some other wheaty goodness. Since I can’t eat any of those things, grabbing lunch at a drive through and keeping on trucking is not really doable.

That’s why I’ve started packing my own car-friendly food. Not only can I make my sandwiches gluten free, I can also make them way tastier, healthier, and more inexpensive than grabbing food on the go. Take this turkey and goat cheese sandwich. Where am I going to find something like that at a drive through window?? I’ll take this homemade baby over fast food any day.

Now, if you’re thinking, “Um, Andi. You accidentally put jelly on your turkey, you weirdo.” just hear me out. I was a little nervous about it at first too, but then I thought about turkey sandwiches with cranberry sauce being a thing and decided to give it a try. I already love goat cheese combined with sweet flavors, so I felt like this combo would be a hit. IT WAS! Turkey + goat cheese + jam makes for a salty, tangy, sweet combination that I absolutely love.

I used Hillshire Farm® oven roasted turkey breast and homemade berry preserves. The thin-sliced deli meat is perfect, and I recommend piling it high. Add lots of greens too because all the protein and veggies are so good for you! If you are fresh out of homemade berry preserves, try store-bought preserves instead, preferably blackberry, blueberry, or raspberry.

This sandwich travels really well. You can put it in the reusable container that comes with your Hillshire Farm® lunchmeat. Don’t throw that thing away! Besides being handy for storing sandwiches and leftovers, I also use them for hair clips, desk supplies, loose toys, and all sorts of things. You can never have too many plastic containers with lids, so I’m always excited to get a new one when I buy lunch meat!

Ingredients

  • 2 slices sliced sandwich bread
  • 2 tablespoons goat cheese softened to room temperature
  • 1 teaspoon berry preserves or jam
  • 46 slices Hillshire Farm® Turkey Breast Lunch Meat
  • handful baby kale or spinach leaves

Instructions

  1. Spread softened goat cheese over one slice of bread. (You can soften the cheese in the microwave for 5-10 seconds to make it spreadable.) Spread jam over the goat cheese.
  2. Arrange turkey over the cheese and preserves, and pile greens on top of turkey. Place the other slice of bread on top, cut sandwich in half, and enjoy!
